Hinoki Restaurant at China Square Central Review

If you’ve been to Japan and dined at a japanese restaurant there, you’ll find that many places in Singapore do not match up to that expectation once you’re back. As such, I have been on a hunt around Singapore to find affordable japanese food (pardon the occasional indulgences) to curb my cravings and pamper my taste buds.


So when the invite came for my family and I to check out Hinoki Japanese Dining’s seven course mini kaiseki (traditional, multi-coursed dinner), both excitement and trepidation were within reason – Its main chef Santaro Li had the pedigree, having served his time well in prestigious restaurants like Kanetanaka in Ginza or training under “Iron Chef” Michiba Rokusaburo. But could Japanese really be done by, well, a non-japanese?



Hinoki is conveniently located at China Square Central amist a beautiful shophouse cluster design to cater to the office crowd  and had a posh, private exterior. The interior had an 18 seater sushi counter, a separate private room and other seats for casual dining. We decided to sit at the sushi counter to observe the chefs at work, and spotted a cute sushi clock on the wall, the use of a microwave to dry seaweed wrappings, as well as chefs speaking to each other in dialect.



We were not presented with a menu, but were told that there are 3 different mini kaiseki sets to choose from. Priced at $85, (with a full omakase kaiseki set also available at $138 or $168) and with my family of four, we opted to have two of the Wagyu beef sets and one each of the Gindara and Tempura sets.

The full omakase set has mentaiko oysters!! I want!!

Appetizer

The seven course meal started off with a simple appetiser of dried scallops and cold tofu with eggs. Drying certain types of foods – such as the scallops – intensifies the flavour, and the small dollop of yuzu (citrus) soy sauce on top helped to give the mochi mochi (chewy) scallops that extra kick when munching on them to release the flavour.



The tofu was barely discernable under a mountain of roe and scallions; and topped off with a dash of century egg yolk – part of chef Li’s fusion fare. Our father dislikes tofu, but even he scarfed up this combination that made for a rich and buttery smooth combination.

Sashimi

Almost as quickly as the one-bite starters were done came everyone’s favourite sashimi. A collection of the basics – salmon belly, maguro (tuna), hamachi (yellow tail), swordfish and tako (octopus). They were fresh and juicy, and upon inquiry, Chef Li noted that their stock comes straight from Tsukiji fish market in Tokyo, Japan. My favourites were the slightly sweet salmon belly that melted in my mouth along with the hamachi that was full of flavour from its freshness. This was gulped down pretty quickly, but I felt that the wasabi had lost some of its zest, perhaps it was left uncovered or not grated freshly and I wished there was a little bit of ginger to help cleanse the palate between bites.

Chef Li was a delight to talk to in person, with a warm personality and an easy grin. It was interesting to watch him work (he served a few others while we were there), serving dishes in traditional Japanese senses and styles, presenting sashimi platters that were elegant to look at while also maintaining amazing freshness and flavour.

Soup for the Soul




It was only a little later, on perusing their menu that we realized that they had swapped dish two and three around – our third dish was a hearty soup. Looking rather oily, but tasting clear and smooth with brown beech mushroom (buna shimeji) and scallions that just warmed up the insides alongside the soft swordfish belly meat. While swordfish is usually a little bit more crunchy with its meat, swordfish belly is quite fatty, creating a more tender but distinctive taste without becoming too oily.

Tempura vs Wagyu vs Gindara (Cod Fish)

From here on out, most of our dishes differed. My brother’s fourth dish was a tempura set that came with ebi (prawns), shiitake mushrooms, sweet potatoes and other assorted tempura staples. Though it was not too oily and tasted well with the dashi, the prawn itself was not chewy or tasty, which was a little disappointing.






Our mother had the mentaiko Gindara fish which was steamed to perfection, skin was tasty without any ‘fishy’ taste and the sweetness of mentaiko was simply divine. Undenyably one of the best dishes of our meal, and our mum had to fight the rest of the family off from taking more than a single bite out of it. I’ve got a soft spot for mentaiko as it just adds so much depth and flavour to dishes, whether in its plain or spicy variations.

My father and I had the wagyu beef, which turned out to be the most disappointing of the entire meal. It tasted like regular stir-fried Chinese-style beef, the sort anyone finds at their local zhi char store or restaurant, and the wagyu was cooked to well-done. While tastes differ on how cooked they want their meat to be, wagyu when well-done loses half the point as the fat sizzles off during the cooking process. It was moist and chewy with a little fat going well with the stir-fried vegetables, but it simply did not excite us as much as the mentaiko did.

Unagi and Tempura


Delicious eel with pickles

My brother had a small serving of unagi (freshwater eel) with vinegered seaweed and pickled cucumbers, which he mixed together to eat. This created a fascinating new blend of tastes that was at one moment sour from the vinegered vegetables and in another sweet and juicy from the eel. The vinegared seaweed was light, not overpowering but complementing the freshly broiled eel, and the cucumber gave an added crunch to the dish. It was unexpectedly one of his favourite dishes.


Dish five for my parents and I was tempura, albeit only vegetables. 


Legendary Chirashizushi and Unagi


Our sixth – and final before dessert – dish was hot fresh unagi with miso soup while my brother had a luxurious chirashizushi bowl all to himself :( 

The unagi was the traditional sort, well-broiled and dripping with sauce over a bit of rice.


But it paled in comparison to the chirashizushi bowl, which was like having another round of mouth watering sashimi all over again. I was so envious I wished I had picked the tempura set for myself! The bowl had more of everyone’s favorites, including ama-ebi (sweet prawn), crab meat, roe and regulars such as salmon and maguro all with the expected freshness. This was all on top of a layer of rice flavoured with furikake (flavoured condiment). Hinoki should name this kaiseki set as the Sashimi set instead of Tempura because the servings for sashimi was much more generous!

Washed down with some miso soup that was thick and fragrant :)

Dessert – sweet and refreshing               

Dessert was a scoop of home made yuzu that was refreshing and a good end to the meal. It had bits of oranges that was chewy and a little sour to perk you up.


All in all, our favourites were the Tempura and Gindara sets! The tempura set had a generous portion of sashimi and delicious unagi pickled mixture which was a welcome change. The Gindara set had an awesome cod fish mentaiko which we had to resist our urge to lick the plate clean.  Please, please get them when you’re at Hinoki, make a reservation before you head down to get sushi counter seats which, in my opinion, were the best seats. Service wise, the waitresses would refill our green teas on request and clear our dishes promptly – maybe at times a little too prompt, but I would prefer if they were friendlier or more cheerful. The ambiance also felt a little off, with the radio playing latest English music hits and table arrangements looking more utilitarian rather than fitting in with the style.

Hinoki isn’t the type of place to bring for a romantic date, but a casual gathering with colleagues over lunch or dinner. The sushi and sashimi selection were really fresh and well-presented, be sure to drop by especially if you’re working around the area. Remember to try their mentaiko cod fish or chirashizushi bowl!

Sealy one month later

It took about a week to adjust to my new bed. In that week, I tossed and turned for about 10 mins before I could get to sleep, and my old memory foam pillow (not from Sealy) was causing me stiff necks in the morning.

But it was worth it.

By the second week, my body was completely adjusted to my new Sealy and things were looking awesome! I gave my memory foam pillow to my brother, and switched to the complimentary pillows Sealy provided me with, and my neck issue was gone.


In my first blog post, I mentioned that I often had back aches from just lying on my bed, but ever since I used my Sealy, my back aches never came back! Now, I fall asleep almost instantly when my head hits the pillow and my body starts recovering more effectively. :) I don't wake up randomly during the night and have trouble going back to sleep anymore. I've been having more dreams now, which is a sign that I'm having more REM sleep, which improves my memory retention and is healthier for the body.

It's important to get Stage 4 of deep sleep and REM sleep or you will have trouble focusing during the day, experience lower productivity levels and causes you to feel drowsy and irritable. It's also important to get enough rest so your immune system is rejuvenated and internally, your cells and muscles can repair and grow. Also, pain may be intensified by the physical and mental consequences of lack of sleep.Thus, staying up all night to study for that test or finish that presentation actually is more detrimental than originally thought!

Do note that quantity is not quality. You may sleep for many hours, but if your sleep isn't deep enough,  if your sleep cycle is disturbed, you may still be at greater risk for illness. A simple way to gauge the quality of your sleep is to see how refreshed you feel when you wake up.


As a result, I am happier, my energy levels during the day are higher and I feel more motivated to do more activites like sports! Plus, I think my eyebags and eye circles have reduced hehe.

Squishy explores the Sealy the first time

Her second time and Squishy loves it!! Look at her happy contented 'lepak' (relaxed) face hahah. Don't worry she's toilet trained!

When I was changing bedsheets, I noticed the clever rubberised fabric cover actually helps grip my bedsheets to keep them in place for a tidier looking bed! You know how sometimes you wake up in the morning and your bedsheets are out... that didn't happen with my Sealy :)

So in the last adventure we left off with tips on how to pick mattresses and the delivery of my bed, now came the last run, designing the bed! I spent HOURS picking mattress covers because there was so many to choose from plus there were so many combinations to choose from, with pillows and bed skirtings available
at the same place :)


Here are my picks!

Look #1: Thrown together

Found a brand new unused bedsheet in the storeroom which had matching pillow cases! Threw on a dash of colour with this vintage floral quilt and this was the first design before I went out to buy more.

Great for my habits which include: sleeping diagonally, kicking and leaving my ipad on the other pillow. This bedsheet is really soft and doesn't look 'old' despite several washes! Plus the comforter makes everything look neat.

Look #2: Corporately me

Thought of having a more mature bedsheet so that I'd feel more professional when I woke up. Thus this brown swirly bedsheet design!


Possibly goes well with your boyfriend/husband for those who share beds with them. I wanted to brighten up the bed with a pop of colour so I went down to IKEA to hunt for these orange pillow cases and bought separate pillows :)

Threw in a sun hat because Singapore's weather is hot and another smaller cute soft toy from Osaka's Rilakkuma store which shows Korilakkuma being a store assistant. Very apt to describe corporate life! Haha. Bachelors can also use this bedsheet design too.

Look #3: Girlish but stylish

Please pardon the creases *shifty eyes* but this is my favourite design of all!

Waking up to this makes me feel like dressing up for the day! Even while I was in Phuket I was thinking of my mattress back home. Oh and apparently I don't kick anymore!! Hehe

In future when I (eventually and hopefully) get married, I am definitely going to have a Sealy no matter what my (currently non-existent) husband says. And maybe I'll occasionally let my future kids sleep with us,  hehe!

A Sealy® transformation - How to pick a mattress?

After years of sleeping on an overused mattress, my new and first Sealy luxury mattress was delivered to my place about two weeks ago and I am loving it! Switching from a single bed to a queen sized bed meant that I had to shift some things about, and that took me a while to clean, sort out and prepare. However, when that fated day came, I was so excited I was even late in meeting my friends for dinner! The whole experience so far has definitely been incredible and I don't think I can sleep on any other mattress other than a Sealy anymore. Well, more on that later.

If you have to bring your kids with you to the Sealy showroom, they have a little area with children's books for your kids to be entertained!

As this was the first time I was picking my own mattress, I wanted to pick an awesome one which I could thoroughly enjoy and use for 10 years (useful life). If you think about it, picking a quality mattress which costs about $3,000, works out to about $300 a year and less than $1 a day. That's less than a cup of iced milo from a hawker centre these days, plus you sleep on a mattress much longer than you take to drink a cup of milo :p Furthermore, compared to the potential costs of back injuries, posture problems that amount to more than $10,000 worth of health bills, physiotherapy sessions etc, a Sealy is a really good investment!

Now, I mentioned in my first Sealy blogpost that I was going to share the secrets of how to pick a mattress, because a while ago I had no clue what to look out for. It's just 3 steps so it's not too difficult to remember too.

1) The 'roll' test

The whole purpose of getting a comfortable mattress is so that your body can rest and recover from the day's activities, so someone disturbing or disrupting your sleep would be the last thing you'd want! With that in mind, I came up with this test because I am a light sleeper and I wake up whenever there's movement on the bed.

If you need someone to 'test' it for you, don't be shy and ask the Sealy assistants!

This test requires you to ask a friend/husband/wife/kid to lie down on the other side of the bed, and turn. From the left to the right, from lying on your back to your tummy, try it all. While your partner is tossing around, close your eyes and focus on the transfer of energy. Can you feel your partner moving about? Does it affect you? If you're a completely heavy sleeper than... consider this for your companion lol.

I picked my Luxury Firm Mattress mainly because of this reason, so don't skip it even though it may look silly! The torsion bar support in Sealy mattresses absorbs the stresses and shocks that a bed experiences and adds years to the life of your mattress.

2) Your sleeping position/back problems
Through this Sealy journey, I learnt that your sleeping position can affect the mattress you pick to sleep in. It boils down to the science and the pressure points.

I like to sleep on my side, sometimes in a foetal position, but I usually wake up on my back. Hmm.

If you prefer to sleep on your side, a smaller surface area of your body is carrying your body weight, so a softer mattress would suit you better. People who sleep in a foetal position appear tough but are sensitive. They also take a longer time to warm up to people. Any person with back problems should look for a firmer mattress to provide more support over comfort. Sleeping on your back is usually noticed in people who are quiet, reserved and set high standards for themselves. If you sleep on your stomach like me in the picture above, a softer mattress would balance the strain and relieve some pressure. People who sleep on their stomachs are likely to be confident and quick in making decisions.

3) That 'feeling'
When you're at a mattress showroom, just try all the beds that they offer. You'll be able to tell the difference between premium extravagent mattresses from the basic entry level ones, and yes there's a whole lot of difference. Some will feel more comfortable, some might feel 'strange', some might even trigger back aches so it's imperative you take your time to decide on one.

Doesn't matter how glam or unglam you look, it's about how it feels, oh and whether your pet enjoys it too.

Was talking to Sealy Sales Consultant, Ivy, who recommended lying on a mattress for at least 10 minutes to get the real feel of the bed, experience the memory foam (if any) taking the contour of your body and for the mattress to balance your pressure points. I'm not complaining if I have more time to relax on a Sealy, after all, they're designed to provide the perfect balance of correct supporting and amazing comfort :p

PSST! The best position to sleep in is actually on your back because it reduces acid reflux and minimizes wrinkles. However it's also the position which encourages snoring :(

Being born and raised in Singapore, I do have a sense of patriotism and a certain defensive aura if anyone doubts the credibility of my favourite chicken rice stall. Since 2007, Nexus has successfully organised the N.E.mation! digital animation competition for youths to express their thoughts on Total Defence. With training and guidance, students with no prior experience in animation have been able to produce clips of broadcast quality to screen on free-to-air television. Some of these clips were even selected for international animation festivals and won several awards!

Plus, the winners of the N.E.mation! competition win an all expenses paid trip to US to visit a renowned animation studio worth more than $15,000!! Runner ups also win up to $4,000 worth of attractive prizes!
